Hiring is usually done from Rome and most employees there are expats with fat benefits. When hired locally it is done through headhunters. Interview process is a bit shady. They will hire you if you appear decent and accept lower pay. They will ask you technical questions about the position which can be specific (con tango curves, arbitrage opps, derivative pricing)
