The only pro was it was laid back, until guests want food and you have to make food AND drinks.

Not only are you the bartender, but also the server AND the cook. The money isn't good because you are literally doing 3 jobs in one. And also, when they have large parties, they hire their own bartenders which is complete slap in the face to the underpaid employee that they already have... There are also many other issues like poor management, poor training, and the unclean kitchen.
