It was very brief. The recruiter and I corresponded through email and worked out a good day for a phone interview. Straight away they opened up saying that they had a no nicotine policy and asked if I had used any nicotine in any way in the past 6 months. I really value honesty and an upfront attitude so I told the truth and said that a few months prior I had smoked a cigarette: that I'm not a regular smoker, but every once in a while, if someone offers I might take one. That ended the conversation pretty abruptly though and they said there were no exceptions. I definitely understand why they wouldn't want a regular smoker as a flight attendant, but I would've obviously respected their regulations if I were employed by them. The rule seems unnecessarily rigid to me, but that is their prerogative though. If I were able to go back, I would honestly just lie about it: I'm pretty certain they are just bluffing when they say they can test for nicotine use even after several months have passed.
Best approach is obviously to not have used nicotine for at least 6 months before the interview, but if you haven't for just a few weeks and think you're a good fit for the job, I say go for it.

Colloquio
Two virtual interviews that included an AI interview, a personality questionnaire and a “test” of your ability to use resources provided to answer flight-related questions. After that you’re invited to an in-person interview.
The interview process is lengthy and in depth. They really dive deep. Overall, it was a great experience and ensured that they find the right fit. I did end up accepting and am awaiting training.
