They look for people who are somewhat hip, and who are definitely laid-back, but energetic about work, and people persons (if front of house). The best way to get an interview is to show interest in and knowledge about the company's practices, such as its history, food sourcing, and its general mission. Unless you are applying for upper management, education and experience are usually irrelevant.
