Very casual but also quick and efficient. Interviewed by the owner and the head supervisor (the person directly responsible for scheduling). They asked me to tell them a little about myself and any experience I had. I had relevant dishwasher experience so they gave me a verbal commitment on the spot. I also told them that I was interested in working in the cafe proper rather than the back and they agreed to that immediately as well.

Colloquio
Very casual and informal, but they definitely will call your references to cross-check background. Interviewers were owner of the cafe and operations manager, so they are very hands-on in choosing employees, but very nice people. Interview also included a ten minute demonstration of dish washing and asked me to also demonstrate the dish washing process.
