Colloquio
First step was a phone screen to talk about my background and experience.
Then I was sent a coding assessment. Pretty straight forward but a nice challenge. Definitely focus on properly breaking down the problem into its appropriate parts. Tests are definitely a plus.
Third step was a one hour technical screen with two developers. They had me model things over the phone and kept adding onto what was being modeled to gauge your understanding of OOP, along with other concepts. Expect it to take the full hour, including time to ask questions of your own at the end.
Last step is a half-day on-site, complete with a paired programming session involving your submitted code sample, a one hour lunch that's less technical, and ending with a one hour architecture discussion in which you whiteboard a solution.
Turnaround time can take 24 to 48 hours. My offer came mid-afternoon the next day.
The entire process, as of posting this review, is language agnostic. I got through the whole thing and received an offer without writing a single line of Ruby. I'd wager you'd fare better and/or probably receive a better offer if you do everything in Ruby, though. That said, the offer I was given was solid.
Had first general call with recruiter. Afterward I was asked to complete take home project modeling a backend for the company. Completed, then told did not get a job with zero reasoning as to why

Colloquio
There were four phases:
1) Informal screening with a recruiter.
2) Takehome problem to do on my own time in a language of my choice
3) Technical round interview where they asked me higher level questions about classes/methods/databases
4) Full day session with 1/2 day editing my original coding sample I submitted where they asked to add features and 1/2 day where they asked me to diagram web architecture.
Overall, it was very thorough and allowed me to show off all of my strengths.
The first phone interview was generic, non-technical.
Recruiter would ask about previous background, and introduce the company.
At the end of interview, recruiter send a link of a take-home project (there is no deadline).
