You might work a double shift (10:30am - 10/11pm) with only a 30 minute break and if it was too busy you may not get a break at all. When it is busy managers often focus on helping the servers and kitchen and not the hosts where it can also get very hectic trying to keep track of tables and wait lists. I never received any formal training from management and was just told to follow around a host who was 2 years younger than me and didn't explain much
