Before tax season starts, you let them know the days/hours you can work and then they won't schedule you when you aren't available. Finally, you can exercise a lot of control over how much you earn by "leveling up" (taking classes and tests that make you qualified to do more complex returns). Pay is partly hourly, partly commission, with incentives for leveling up. They've been moving away from in person classes, to online self-study. This is convenient in some ways because you can study whenever you like, but makes it really difficult when you are having a hard time understanding something.
